I keep forgetting that the Academy Awards are today. Which is crazy because this is my favorite televised sporting event. I'm not interested in any of the ones with the balls and the roughhousing, but give me some pretty dresses to look at and I'll make party snacks. I had even intended to go to the Hollywood Farmers' Market this morning. Silly me. (Avoid that whole part of town, please.) So if perchance you need some last minute party fare that can most likely be whipped up from the contents of your kitchen, might I suggest this onion dip? It would go quite nicely with the oven roasted potato chips that are currently up on the Vegan Vice site.
Onion Dip
1 large onion
2 T. olive oil
1 c. raw cashew pieces
dash pepper, cayenne, nutmeg
1/2 t. salt
1 T. nutritional yeast
1/2 c. soy milk
1/4 c. vegenaise
2 T. lemon juice
1 t. miso
green onion to garnish, or crispy fried shallots, or better yet both
Cook onions in olive oil over medium-low heat until they're sweet and brown and melty. In the meantime, grind nuts, along with the salt, pepper, cayenne, nutmeg, and nutritional yeast in a food processor until quite fine. Add the onion, lemon juice, soymilk, and vegenaise and blend until smooth and creamy. Refrigerate until ready to use. Garnish with green onion and/or fried shallot. Serve with potato chips.
And beer (or root beer). And pizza. With butterscotch pudding for dessert. This menu makes me feel fancy - perfect for today's festivities.
Notes: Next time that I make this I will brown two onions and reserve one to stir in at the end.
