And now begins Seitan Watch 2007. I am endeavoring to find you the best recipe for the storied wheat meat. Now, I know that best is a subjective term so we shall judge on ease and texture. Though the precise rubric has yet to be formulated, I feel that this first entry will get high marks on both qualities. This Los Angeles native comes to us from The Real Food Daily cookbook. It was easy to whip up with ingredients I had in my kitchen and baked up to a nice meaty texture. Not too spongy nor too dense. Competing for the title of best seitan recipe are the following:
*the PPK method (of course)
*the Lachesis method from the PPK forum (the crowd favorite)
*My Nonna (a sentimental choice- I just love my nonna)
*Vegan Planet (a classic from the knead and rinse school)
These are five prominent recipes that I think represent the major schools of seitan thought. They are all strong contenders, but stay tuned to see which will wear the crown. (Oh, there will be a crown...I taught elementary school you know.)
