I have so much to tell you, but before I forget, I want to write down this recipe. It's really hardly a recipe at all, but it was just so good and so simple that I must post it to remind me to eat this again. Soon.
Corn and Kale Saute
2 Tbsp. olive oil
1 clove garlic
1/4 tsp. red chile flakes (or to taste)
1/2 head black kale, chopped
1 ear of corn
lemon juice
salt
Heat oil in a medium skillet over medium-low. Saute the garlic and chile for about a minute. Add the kale and a generous pinch of salt. Stir and cover. Let the kale steam for about 5 minutes. Remove the kernals from the raw ear of corn. When the kale has softened, turn up the heat a bit and add the corn. Saute for about 2 minutes, until the corn has brightened and lost its raw flavor. Squeeze a bit of lemon juice over the saute and serve.
