Before I tell you who won the cookbook contest with snubbr.com, can we just take a moment to discuss my breakfast? It was so good and so simple. Here, have a bite.
Breakfast Rice Pudding
- leftover short grain brown rice
- milk to cover (I used rice milk and soy milk - it's what I had.)
- a lump of brown sugar
- a dash of cinnamon
- a big spoonful of roasted, salted almond butter
In a small saucepan, over lowish heat, stir together all the ingredients. Bring to a simmer. Continue to cook and stir until the rice is soft and has absorbed some of the milk. Smash some of the soft rice against the side of the pot while you're at it to thicken the pudding. When it looks and smells thick and delicious, remove from the heat and eat.
