This week's meal plan is dedicated to the American Vegan Kitchen by Tami Noyes of Vegan Appetite fame. Filled with recipes typical of American diners and Midwest kitchens, it will be perfect for a kind of blustery late spring week here. I made the crockpot seitan last night and it's delicious. Tonight it will join forces with grilled onions and a bit of gravy in her Almost-Philly Cheese Steak Sandwiches. The lady clearly has a way with seitan, so Wednesday we're going to make her seitan ribs. What am I overlooking? What recipes do you love from this book?
Monday - philly cheesesteaks and broccoli salad
Tuesday - not-from-the-book stuffed shells (I have to use up the filling that I stuffed into puff pastry pockets to take to the park this morning. By the way, I have a new plan to stuff everything in frozen puff pastry. It's insta-fancy and crunchy delicious. The filling is crumbled extra-firm tofu, leftover pesto, blanched spinach chopped fine, salt and pepper), and a caesar salad
Wednesday - ribs, corn on the cob, and crunchy green salad with ranch dressing
Thursday - tamales - not from the book, from the farmers market
Friday - pasta and bean soup
