Monday: There's a fundraiser for our preschool at a local pizza place tonight. My general philosophy on pizza is: If it's good, it doesn't need cheese. Unfortunately, tonight we will not be dining on good pizza. Therefore, I intend to pack some sort of cheese sauce.
Tuesday: Quick Red Posole (from Viva Vegan!) with Beans and Banana Tarte Tatin with Coconut Vanilla Ice Cream. (Eep. I love soup and dessert for dinner.)
Wednesday: Potato-Chickpea Enchiladas with Green Tomatillo Sauce (again, from Viva Vegan! More about the book later in the week.)
Thursday: leftovers
Friday: tostadas
