Fall Family Dinner

Paul's home.  He finished "long work" on Wednesday, and now there's a bit of time to breathe for a moment.  And maybe even eat a nice meal together.  Here's one -

Mac 'n Cheese Bites

with Spinach Apple Salad - (that's lettuce up there in the picture, but I really like this salad with spinach) baby spinach, diced apple, toasted pecans, and apple cider salad dressing

 

and Pumpkin Cupcakes for dessert.

(If this is not an occasion, they don't need frosting, and then really, they're awfully easy.)

I would like an official Vegan MoFo Reader badge, please.  With over 700 blogs participating in the Vegan Month of Food, I felt that I could be of best service to the community by shutting my mouth and reading along. I'm almost through the c's.  Here are a few blogs that I have either recently discovered or rediscovered that are totally worth reading - 

On Cardamom and Cast Iron - This blog is full of easy baking recipes and has a banner with a small child picking a pumpkin.  I'm a sucker for kids and pumpkins.   

Chew on This! - vegan family recipes, well-written, clean format - I'm there.

Cold and Sleepy Cooks - I just cannot resist the squishy baby that graces the pages of this blog.  Plus the photo-heavy format helps me quickly see what another vegan family is eating - always helpful.

'Cause I Eats Me Spinach - Sassy writing, nice photos, tantalizing recipes - dig it.  

The Carnal Vegan - Last week, Sophia posted a different poem about food everyday.  They were all excellent choices, mostly poems I didn't know by poets I love, and I thought this was just a lovely way to play along with the vegan mofo.
