Today's tip comes via Southern Biscuits by Nathalie Dupree and Cynthia Graubert with some minor whole grain modifications by me.
Whisk together 1/2 cup white whole wheat flour, 1/2 cup all-purpose flour, 1/2 teaspoon salt, and 1 1/2 teaspoons baking powder.
The combination of white whole wheat and regular all-purpose will get close to the protein content of the soft white flour that you get in the South, while still bringing some whole-grain goodness to help you avoid the diabetes you get in the South. (I totally wrote this last week before Paula Deen made her announcement.)
Make yourself up at least a couple cups worth, because I'll be back with your definitive vegan biscuit recipe on Thursday.
